β’ 2 cups of oats (the regular old-fashioned – not quick-cooking or Instant)
β’ 1 cup grated carrot (packed)
β’ peppermint candies (we used candy canes because – well, Christmas!)
Combine everything except the candies, stirring well until everything is moistened. This can take a minute, but it will happen! Line a cookie sheet with parchment paper or a silicone mat. Roll cookie dough into balls – about 1.5″ (3/4 ounce by volume or a #40 scooper).
Bake for 10-12 minutes. While they’re baking, prep the candies. If using candy canes, break into approx 1″ pieces. Press into the top of the cookies after removed from the oven while cookies are still hot. Careful! Don’t burn yourself. Allow cookies to cool for a few minutes, then transfer to a cooling rack. Cool completely.
Serving size – 1 treat (they will want more, but all things in moderation!)
